Tofu Cheese Cake
Base:
2 oz. Low fat spread
2 Tbsp. Apple juice
2 1⁄2 cups Bran flakes or other high fiber cereal
Filling:
1 1⁄2 cup Tofu
7 oz. Low fat plain yogurt
15 ml/3 sheets Gelatin (soaked in cold water)
4 Tbsp. Apple Juice
Topping:
Fresh Fruits and/or Berries
Mix the spread, apple juice and bran flakes. Spread into
a mold to form a crust.
For the filling, blend together the tofu, yogurt, gelatin,
and apple juice together until smooth. Pour into mold and
refrigerate until firm.
Top with fresh fruit and/or berries.
