Grilled Lamb Chop with Honey and Aux Poivres
Serves 4
3/4 cup red wine
1/4 cup olive oil
2 tablespoons Mediterranean Blend
2 tablespoons minced garlic
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon Aux Poivres
2 teaspoons Regime Blend
2 tablespoons honey
8 (1- to 1/2-inch-thick) lamb chops, approximately 21/2
pounds total
Combine wine, oil, spices and herbs,
vinegar, garlic and honey. Mix and taste, adjust seasoning.
Place lamb chops in a glass baking dish and pour marinade
over them. Allow to marinate 30 minutes to 1 hour. Remove
from marinade and grill 5 to 7 minutes over medium hot coals,
brushing often with the marinade.
Serve with grilled vegetables such as
red, yellow and green peppers, baby eggplant, zucchini and
summer squash and red onions.
