Spiced Pumpkin Seeds
For St. Pierre with Pumpkin and Balsamic
Glaze
Makes 2 cups
2 cups pumpkins seeds, well cleaned
2 tablespoons olive oil
2 teaspoons Mellow Yellow or Regime Blend
1 teaspoon chopped garlic
Salt and pepper to taste
Bring 2 cups water with 1 teaspoon sea
salt to a boil. Add pumpkin seeds and cook 2 to 7 minutes
until tender and salty tasting. Remove with a strainer and
dry above the oven. When dry, saute in the olive oil until
lightly brown and crisp, approximately 5 minutes. Season
with spice powder and garlic. A little chopped parsley may
be added for color at the end of the process.
